Ingredients

- 2 Chicken Breasts
- 2 Potatoes (Russets or Yukon Golds)
- 2 Carrots
- 2 Stalks of Celery
- 1 Onion
- 3 Cloves of Garlic
- 4 Cups Chicken Broth
- 2 Bay Leaves
- Salt to taste
- Pepper to taste
- 1 tsp Thyme
- 2 tbsp Olive Oil
Instructions
- In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; cook until softened, about 5 minutes. Stir in minced garlic and cook for another minute.
- Add chicken breasts and pour in chicken broth until submerged. Add bay leaves, thyme, salt, and pepper. Bring to a boil, then simmer for 15 minutes.
- Peel and chop potatoes into cubes. Remove chicken, shred it, and return it to the pot along with potatoes.
- Simmer for another 15-20 minutes until potatoes are tender. Taste and adjust seasoning if needed.
- Ladle soup into bowls, garnish with fresh herbs if desired, and enjoy!
