A comforting dish that combines tender chicken, pasta, garlic, and creamy Parmesan sauce, perfect for a cozy night in.
Ingredients

- 1 lb Boneless, skinless chicken breast, diced
- 8 oz Fettuccine or spaghetti
- 3 cloves Garlic, freshly minced
- 1 cup Grated Parmesan cheese
- 1 cup Heavy cream
- 2 tbsp Olive oil
- 2 cups Fresh or frozen spinach
- Salt, to taste
- Pepper, to taste
Instructions
- Cook the pasta in boiling salted water until al dente. Reserve 1 cup of pasta water before draining.
- In a large skillet, heat olive oil over medium heat. Add diced chicken and season with salt and pepper. Cook until golden brown.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in heavy cream and let simmer for a couple of minutes. Gradually stir in Parmesan cheese until melted.
- Add the cooked pasta and a splash of reserved pasta water, stirring in spinach to wilt.
- Taste and adjust seasoning with more salt, pepper, or cheese. Serve with extra Parmesan on top.
Notes
To keep the garlic flavor strong, add it towards the end of cooking the chicken. This dish can be reheated easily; just add a splash of cream.
