Description

Ingredients

  • 2 cups chicken breasts, cooked and shredded
  • 2 cups mixed vegetables (fresh or frozen)
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 2 cups biscuit mix
  • 3/4 cup milk
  • Salt, pepper, and herbs (like thyme or rosemary) to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix the shredded chicken, mixed vegetables, cream of chicken soup, and chicken broth. Season with salt, pepper, and herbs.
  3. Pour the filling into a greased 9×13 inch casserole dish and spread it evenly.
  4. In another bowl, combine the biscuit mix and milk until just mixed. Do not overmix; the mixture should be a bit lumpy.
  5. Spoon the biscuit mix over the chicken mixture.
  6. Place in the preheated oven and bake for about 30-35 minutes, or until the biscuits are golden and cooked through.
  7. Allow to cool slightly before serving.

Notes
