- 2 medium sweet potatoes, peeled and cubed

Instructions
- Prep the Ingredients: Peel and cube the sweet potatoes, and chop the bell peppers and onion.
- Cook the Chicken: In a large skillet, heat olive oil over medium heat. Season chicken with salt, pepper, and paprika. Cook until golden brown and cooked through, about 6-7 minutes per side. Remove and set aside.
- Sauté the Veggies: In the same skillet, add onion and garlic. Sauté until fragrant, about 2 minutes. Then add sweet potatoes and cook until tender, about 8-10 minutes.
- Combine Everything: Add chicken back to the skillet with bell peppers and cumin. Cook for another few minutes until heated through.
- Final Touches: Adjust seasoning to taste, and add fresh herbs if desired.
