Description

These chewy pumpkin spice cookies combine seasonal flavors with a comforting texture, perfect for fall.


Ingredients

  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda

  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter, brown sugar, and granulated sugar in a mixing bowl until light and fluffy.
  3. Add the pumpkin puree and egg, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt.
  5. Gradually add the dry mixture to the wet mixture and stir until just combined.
  6. Scoop the dough onto the lined baking sheet, leaving space between each cookie.
  7. Bake for about 12-15 minutes until edges are lightly golden and centers are soft.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
