Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the softened butter, brown sugar, and granulated sugar in a mixing bowl until light and fluffy.
- Add the pumpkin puree and egg, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt.
- Gradually add the dry mixture to the wet mixture and stir until just combined.
- Scoop the dough onto the lined baking sheet, leaving space between each cookie.
- Bake for about 12-15 minutes until edges are lightly golden and centers are soft.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
