- 8 oz almond paste
- 1 cup granulated sugar
- 2 large eggs
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 cup powdered sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, break up the almond paste and mix with the granulated sugar until combined.
- Add the eggs one at a time, mixing well until smooth and creamy.
- Sift in the all-purpose flour and baking powder, mixing until just combined.
- Add the vanilla extract and mix gently.
- Roll the dough into small balls, about the size of a tablespoon.
- Roll each ball in powdered sugar and place on a lined baking sheet with space in between.
- Bake for 12-15 minutes until golden on the edges but still soft in the middle.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Use quality almond paste for the best flavor. They can be stored in an airtight container for up to a week.
