Description

A comforting one-pan dish that combines ground meat, rice, spices, and plenty of cheese, perfect for weeknights.


Ingredients

  • 1 lb Ground Beef or Turkey
  • 1 cup Long-grain White or Brown Rice
  • 2 tbsp Taco Seasoning
  • 1 cup Cheddar Cheese, shredded
  • 1 cup Monterey Jack Cheese, shredded
  • 1 Bell Pepper, diced
  • 1 small Onion, diced
  • 1 can Diced Tomatoes
  • 1 cup Chicken or Vegetable Broth
  • 1 cup Corn (optional)


Instructions

  1. In a large skillet over medium heat, brown the ground meat for about 5-7 minutes, breaking it into small pieces.
  2. Add diced onions and bell peppers, sauté for another 3-4 minutes until soft.
  3. Stir in taco seasoning until the meat and veggies are well coated.
  4. Pour in rice, diced tomatoes (including juice), and broth, and stir to combine.
  5. Cover and simmer on low for about 20 minutes, or until rice is cooked.
  6. Top with cheese, cover again, and let it melt for 2-3 minutes.
  7. Serve and enjoy with your favorite toppings!

Notes

Don’t skip the broth for added flavor. Feel free to customize with different cheeses or add beans for nutrition.
