A comforting one-pan dish that combines ground meat, rice, spices, and plenty of cheese, perfect for weeknights.

- 1 lb Ground Beef or Turkey
- 1 cup Long-grain White or Brown Rice
- 2 tbsp Taco Seasoning
- 1 cup Cheddar Cheese, shredded
- 1 cup Monterey Jack Cheese, shredded
- 1 Bell Pepper, diced
- 1 small Onion, diced
- 1 can Diced Tomatoes
- 1 cup Chicken or Vegetable Broth
- 1 cup Corn (optional)
Instructions
- In a large skillet over medium heat, brown the ground meat for about 5-7 minutes, breaking it into small pieces.
- Add diced onions and bell peppers, sauté for another 3-4 minutes until soft.
- Stir in taco seasoning until the meat and veggies are well coated.
- Pour in rice, diced tomatoes (including juice), and broth, and stir to combine.
- Cover and simmer on low for about 20 minutes, or until rice is cooked.
- Top with cheese, cover again, and let it melt for 2-3 minutes.
- Serve and enjoy with your favorite toppings!
Notes
Don’t skip the broth for added flavor. Feel free to customize with different cheeses or add beans for nutrition.
