Description

Ingredients

  • 4 Russet or Yukon Gold potatoes
  • 1 lb ground beef or turkey (or meat substitutes for vegetarian option)
  • 2 tablespoons taco seasoning
  • 1 cup cheddar cheese (or Monterey Jack)
  • ½ cup sour cream (or Greek yogurt)
  • 1 cup diced tomatoes (for topping)
  • ¼ cup green onions (for topping)
  • 1 avocado (for topping)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bake the potatoes for 45-60 minutes until fork-tender.
  3. Brown your choice of ground meat in a skillet over medium heat, then stir in taco seasoning and a splash of water. Simmer for 5 minutes.
  4. Slice the baked potatoes open and fluff the insides with a fork.
