- 4 cups all-purpose flour
- 2 tablespoons granulated sugar
- Coarse salt (for sprinkling)
- ½ cup baking soda
- Shredded mozzarella cheese (fresh or low-moisture)
- 4 tablespoons unsalted butter (melted, for brushing)
Instructions
- In a large bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.
- Add flour, sugar, and salt to the bowl. Mix until combined, then knead for 5-7 minutes until smooth.
- Place the dough in a lightly greased bowl, cover with a cloth, and let it rise for about an hour until it doubles in size.
- Once risen, divide the dough into equal pieces. Flatten each piece and place a tablespoon of shredded mozzarella in the center. Fold the dough over and pinch to seal.
- Roll each piece into a rope and twist into a pretzel shape, pinching the ends to secure.
- In a large pot, bring water and baking soda to a gentle boil. Boil each pretzel for about 30 seconds, then place on a baking sheet lined with parchment paper. Brush with melted butter and sprinkle with coarse salt.
- Preheat your oven to 425°F (220°C). Bake the pretzels for 12-15 minutes until golden brown.
