Description

Ingredients

  • 1 lb ground beef (lean)
  • 1 cup long-grain white rice (uncooked)
  • 2 cups cheddar cheese (shredded)
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1 can cream of mushroom soup
  • 1 cup beef broth
  • 1 cup mixed vegetables (peas and carrots)
  • 1 tsp paprika
  • 1 tsp pepper


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned and drain off excess fat.
  3. Add chopped onions and minced garlic; cook until soft and fragrant (about 3-5 minutes).
  4. Stir in cream of mushroom soup, beef broth, and seasonings.
  5. Add mixed vegetables and simmer for a few minutes.
  6. Gently fold in the uncooked rice until well combined.
  7. Pour the mixture into a greased baking dish and flatten the top.
  8. Sprinkle cheese generously on top.
  9. Cover with foil and bake for about 30 minutes.
  10. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.

Notes

Don’t overcook the rice; it should be uncooked when added. Keep it moist by adding more liquid if needed during baking.
