- 1 cup long-grain white rice (uncooked)
- 2 cups cheddar cheese (shredded)
- 1 onion (chopped)
- 2 garlic cloves (minced)
- 1 can cream of mushroom soup
- 1 cup beef broth
- 1 cup mixed vegetables (peas and carrots)
- 1 tsp paprika
- 1 tsp pepper
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned and drain off excess fat.
- Add chopped onions and minced garlic; cook until soft and fragrant (about 3-5 minutes).
- Stir in cream of mushroom soup, beef broth, and seasonings.
- Add mixed vegetables and simmer for a few minutes.
- Gently fold in the uncooked rice until well combined.
- Pour the mixture into a greased baking dish and flatten the top.
- Sprinkle cheese generously on top.
- Cover with foil and bake for about 30 minutes.
- Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
Notes
Don’t overcook the rice; it should be uncooked when added. Keep it moist by adding more liquid if needed during baking.
