- 1 lb skinless, boneless chicken breast, cut into bite-sized pieces
- 2 tablespoons Cajun seasoning
- 3 cloves garlic, minced
- 4 oz cream cheese
- 1 cup chicken broth
- 1 cup cheddar cheese, shredded
- 1 cup bell peppers, diced
- 2 cups fresh spinach
Instructions
- Cook the rotini pasta according to package instructions. Drain and set aside.
- In a large skillet over medium-high heat, add a splash of oil and sauté chicken pieces until golden and cooked through. Season with Cajun seasoning.
- Add minced garlic and bell peppers. Sauté until peppers are tender.
- Add cream cheese and chicken broth, stirring until the cream cheese melts.
- Combine the cooked rotini and spinach, stirring to incorporate.
- Mix in cheddar cheese until melted and gooey.
