Ingredients

  • 8 oz rotini pasta
  • 1 lb skinless, boneless chicken breast, cut into bite-sized pieces
  • 2 tablespoons Cajun seasoning
  • 3 cloves garlic, minced
  • 4 oz cream cheese
  • 1 cup chicken broth
  • 1 cup cheddar cheese, shredded
  • 1 cup bell peppers, diced
  • 2 cups fresh spinach


Instructions

  1. Cook the rotini pasta according to package instructions. Drain and set aside.
  2. In a large skillet over medium-high heat, add a splash of oil and sauté chicken pieces until golden and cooked through. Season with Cajun seasoning.
  3. Add minced garlic and bell peppers. Sauté until peppers are tender.
