- 2 cups fresh broccoli florets
- 1 cup long-grain white rice
- 1 cup sharp cheddar cheese, shredded
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups beef broth
- Salt and pepper to taste
- Optional spices: paprika, garlic powder
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add diced onion and minced garlic to the beef and sauté until soft and fragrant.
- Stir in the broccoli florets and cook for about 2-3 minutes until bright green and just tender.
- Mix in the rice, beef broth, and spices. Bring to a boil, then reduce heat to low. Cover and simmer for about 15-20 minutes, until the rice is fluffy and liquid is absorbed.
- Stir in the shredded cheddar cheese until melted and creamy.
Notes
This dish keeps well in the fridge for up to 3 days. For a creamier texture, add a splash of heavy cream before serving.
