Description

Delightful cookies stuffed with a creamy cheesecake filling, combining two beloved desserts into one irresistible treat.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar


Instructions

  1. Preheat the oven to 350°F (175°C). Grease your baking sheets or line them with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a larger bowl, beat the unsalted butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add eggs one at a time and vanilla extract, mixing until well combined.
  5. Gradually add the dry ingredients, mixing just until combined; avoid overmixing.
  6. Gently fold in the chocolate chips.
  7. In another bowl, beat cream cheese, powdered sugar, and a splash of vanilla until smooth and creamy.
  8. Take a tablespoon of cookie dough, fill the center with a teaspoon of cheesecake filling, and top it with another tablespoon of cookie dough. Seal the edges well.
  9. Place the cookies on the prepared baking sheet and bake for 12-15 minutes or until edges are golden brown.
  10. Let cool for a few minutes before transferring to a wire rack to cool completely.

Notes
