Description

A light and refreshing salad that combines the sweetness of apples and the crunch of carrots, perfect for any occasion.


Ingredients

Scale
  • 2 medium Carrots, shredded
  • 2 medium Apples, chopped (preferably Granny Smith or Honeycrisp)
  • 1/2 cup Raisins
  • 1/4 cup Walnuts or Pecans (optional)
  • 1 tbsp Lemon Juice
  • 1 tbsp Honey or Maple Syrup
  • 1/4 cup Yogurt or Mayo (optional)


Instructions

  1. Shred the carrots using a box grater.
  2. Core and chop the apples into small pieces.
  3. In a large bowl, combine the shredded carrots, chopped apples, raisins, and optional nuts.
  4. In a small bowl, whisk together the lemon juice, honey, and yogurt (or mayo) until smooth.
  5. Pour the dressing over the salad mix and toss gently until everything is well coated.
  6. Chill in the fridge for about 20 minutes before serving.

Notes

For added flavor, sprinkle feta cheese on top before serving. Adjust the sweetness of the dressing to taste.
