A light and refreshing salad that combines the sweetness of apples and the crunch of carrots, perfect for any occasion.
Ingredients

- 2 medium Carrots, shredded
- 2 medium Apples, chopped (preferably Granny Smith or Honeycrisp)
- 1/2 cup Raisins
- 1/4 cup Walnuts or Pecans (optional)
- 1 tbsp Lemon Juice
- 1 tbsp Honey or Maple Syrup
- 1/4 cup Yogurt or Mayo (optional)
Instructions
- Shred the carrots using a box grater.
- Core and chop the apples into small pieces.
- In a large bowl, combine the shredded carrots, chopped apples, raisins, and optional nuts.
- In a small bowl, whisk together the lemon juice, honey, and yogurt (or mayo) until smooth.
- Pour the dressing over the salad mix and toss gently until everything is well coated.
- Chill in the fridge for about 20 minutes before serving.
Notes
For added flavor, sprinkle feta cheese on top before serving. Adjust the sweetness of the dressing to taste.
