- 3-4 pounds Chuck Roast
- 4-5 large Onions, sliced
- 2 cups Beef Broth
- 3 cloves Garlic, minced
- 1 tsp Thyme, fresh or dried
- Salt, to taste
- Pepper, to taste
- 2 tbsp Olive Oil
- 1 cup Red Wine (optional)
Instructions
- Heat olive oil in a large pot over medium-high heat. Season the roast with salt and pepper, then sear it on all sides until browned, about 3-4 minutes per side. Remove and set aside.
- Add sliced onions to the pot and cook over medium heat, stirring often, until golden brown, about 15-20 minutes.
- Add minced garlic and thyme; stir for about 1 minute until fragrant.
- Pour in red wine, if using, and scrape up the browned bits from the bottom of the pot.
- Return the roast to the pot and pour the beef broth over it, ensuring the meat is almost covered.
- Cover and let simmer on low for 3-4 hours until fork-tender.
- Remove the roast from the pot, shred or slice, and serve topped with caramelized onions and broth.
Notes
Allow the flavors to meld overnight for an even better taste. Pair with creamy mashed potatoes or crusty bread.
