Description

Delicious Cajun Black Bean Chicken Burritos filled with seasoned chicken, black beans, and fresh veggies, perfect for a crowd-pleasing meal.


Ingredients

  • 1 pound boneless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons Cajun seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup bell peppers, diced
  • 1 medium onion, chopped
  • 4 large tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • Sour cream or Greek yogurt for topping


Instructions

  1. In a skillet over medium heat, cook the diced chicken until browned and cooked through, about 5-7 minutes. Stir in the Cajun seasoning and cook for another minute.
  2. Toss in the diced onions and bell peppers. Cook until they are tender, about 3-5 minutes.
  3. Add the drained black beans and stir everything together until heated through.
  4. In a separate pan or microwave, warm your tortillas until they are pliable.
  5. Place a generous scoop of the chicken and bean mixture in the center of each tortilla, top with shredded cheese, and a dollop of sour cream if desired.
  6. Fold the sides of the tortilla over the filling, then roll from the bottom up to create a burrito shape.
  7. If you want, grill the burritos on skillet for a minute on each side until golden brown.
