- 1 pound boneless chicken breasts, cut into bite-sized pieces
- 2 tablespoons Cajun seasoning
- 1 can black beans, drained and rinsed
- 1 cup bell peppers, diced
- 1 medium onion, chopped
- 4 large tortillas
- 1 cup shredded cheese (cheddar or Monterey Jack)
- Sour cream or Greek yogurt for topping
Instructions
- In a skillet over medium heat, cook the diced chicken until browned and cooked through, about 5-7 minutes. Stir in the Cajun seasoning and cook for another minute.
- Toss in the diced onions and bell peppers. Cook until they are tender, about 3-5 minutes.
- Add the drained black beans and stir everything together until heated through.
- In a separate pan or microwave, warm your tortillas until they are pliable.
- Place a generous scoop of the chicken and bean mixture in the center of each tortilla, top with shredded cheese, and a dollop of sour cream if desired.
- Fold the sides of the tortilla over the filling, then roll from the bottom up to create a burrito shape.
- If you want, grill the burritos on skillet for a minute on each side until golden brown.
