Description

A spicy and crunchy wrap featuring roasted cauliflower coated in buffalo sauce, fresh vegetables, and creamy avocado.


Ingredients

Scale
  • 1 head Cauliflower, cut into bite-sized pieces
  • 1/2 cup Buffalo Sauce
  • 4 Tortillas (flour, corn, or spinach)
  • 2 cups Lettuce (romaine or iceberg)
  • 1 Avocado, sliced or mashed
  • Optional Vegetables (sliced bell peppers or shredded carrots)


Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Toss cauliflower pieces in a bowl with buffalo sauce until well coated.
  3. Spread the cauliflower on a baking sheet lined with parchment paper and bake for about 20 minutes until crispy.
  4. While the cauliflower is baking, warm tortillas in a skillet over medium heat.
  5. Layer lettuce, avocado, and optional veggies on each tortilla, then add the baked cauliflower.
  6. Fold in the sides of the tortilla and roll it up tightly to form a wrap.

Notes

For a milder flavor, mix ranch dressing into the buffalo sauce. Air-frying the cauliflower creates extra crunch.
