A spicy and crunchy wrap featuring roasted cauliflower coated in buffalo sauce, fresh vegetables, and creamy avocado.

- 1 head Cauliflower, cut into bite-sized pieces
- 1/2 cup Buffalo Sauce
- 4 Tortillas (flour, corn, or spinach)
- 2 cups Lettuce (romaine or iceberg)
- 1 Avocado, sliced or mashed
- Optional Vegetables (sliced bell peppers or shredded carrots)
Instructions
- Preheat the oven to 450°F (230°C).
- Toss cauliflower pieces in a bowl with buffalo sauce until well coated.
- Spread the cauliflower on a baking sheet lined with parchment paper and bake for about 20 minutes until crispy.
- While the cauliflower is baking, warm tortillas in a skillet over medium heat.
- Layer lettuce, avocado, and optional veggies on each tortilla, then add the baked cauliflower.
- Fold in the sides of the tortilla and roll it up tightly to form a wrap.
Notes
For a milder flavor, mix ranch dressing into the buffalo sauce. Air-frying the cauliflower creates extra crunch.
