- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- ½ cup brown sugar
- 2 large eggs
- ½ cup all-purpose flour
- ⅓ cup unsweetened cocoa powder
- ½ teaspoon baking powder
- A pinch of salt
- ½ cup chocolate chips
- 1 cup unsalted butter, softened
- 3 cups powdered sugar
- ½ cup cocoa powder
- 2-4 tablespoons heavy cream
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and prepare cupcake liners in your muffin tin.
- In a bowl, combine melted butter, granulated sugar, and brown sugar. Mix until creamy, then beat in the eggs one at a time.
- In another bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.
- Gradually add the dry mixture into the wet ingredients, stirring gently until just combined.
- Fold in the chocolate chips.
- Fill each cupcake liner about two-thirds full with batter and bake for 18-20 minutes, or until a toothpick comes out clean.
- Let the cupcakes cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
- For the frosting, beat together softened butter, cocoa powder, and powdered sugar. Add vanilla and cream until you achieve the desired consistency.
- Once cupcakes are cool, generously frost each with the chocolate buttercream.
Notes
For a healthier version, substitute melted butter with coconut oil. Experiment with flavors in the frosting for a fun twist!
