Delicious cookies made with brown butter and toffee bits, perfect for any occasion.

- 1 cup unsalted butter
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup toffee bits
Instructions
- In a saucepan over medium heat, melt the butter and stir continuously until golden brown and nutty, about 5-7 minutes.
- Transfer the browned butter to a bowl and let it cool slightly.
- In a large mixing bowl, beat together the brown sugar and granulated sugar with the brown butter until creamy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt. Slowly add to the wet mixture, mixing just until combined.
- Fold in the toffee bits until evenly distributed in the dough.
- Chill the dough in the refrigerator for at least 30 minutes.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop dough onto the baking sheet, spacing them a couple of inches apart, and bake for 10-12 minutes or until edges are golden and centers are slightly underbaked.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Chill the dough to help cookies hold their shape. Watch the bake time closely.
