Description

These blackberry cheesecake bars feature a buttery graham cracker crust and creamy cheesecake layered with fresh blackberries, making them a perfect summer dessert.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs
  • 2 cups blackberries, fresh or thawed


Instructions

  1. Preheat your oven to 325°F (160°C). Grease an 8-inch square baking pan and line it with parchment paper.
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar, then press into the bottom of the prepared pan. Bake for 10 minutes.
  3. In another bowl, beat the softened cream cheese and sugar until smooth. Add sour cream and eggs one at a time, mixing well.
  4. Gently fold in the blackberries.
  5. Pour the cheesecake mixture over the cooled crust and bake for 40-45 minutes until the edges puff and the center is set with a slight jiggle.
  6. Cool to room temperature, then refrigerate for at least 4 hours before serving.
