- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 1 cup sour cream
- 3 large eggs
- 2 cups blackberries, fresh or thawed
Instructions
- Preheat your oven to 325°F (160°C). Grease an 8-inch square baking pan and line it with parchment paper.
- In a bowl, combine graham cracker crumbs, melted butter, and sugar, then press into the bottom of the prepared pan. Bake for 10 minutes.
- In another bowl, beat the softened cream cheese and sugar until smooth. Add sour cream and eggs one at a time, mixing well.
- Gently fold in the blackberries.
- Pour the cheesecake mixture over the cooled crust and bake for 40-45 minutes until the edges puff and the center is set with a slight jiggle.
- Cool to room temperature, then refrigerate for at least 4 hours before serving.
