Instructions
- In a large bowl, whisk together the flour, baking powder, sugar, and salt until blended.
- In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients, stirring gently. Don’t overdo it; a few lumps are perfectly fine.
- Preheat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
- Pour about 1/4 cup of batter onto the skillet. Cook until bubbles form and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes, until golden.
- Serve warm with your favorite toppings.
Notes
For best results, don’t overmix the batter and let it rest for about 5 minutes before cooking. Experiment with add-ins like chocolate chips or blueberries if desired.
