Description

A scrumptious baked version of classic oatmeal filled with delicious berries, perfect for a cozy breakfast.


Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 2 cups milk (any type)
  • 2 eggs (or 1/2 cup applesauce for an egg-free option)
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen berries (such as blueberries and raspberries)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine rolled oats, baking powder, brown sugar, and cinnamon.
  3. In another bowl, whisk together milk and eggs, then stir in vanilla.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Gently fold in the berries, being careful not to crush them.
  6. Pour everything into a greased baking dish and bake for about 30-35 minutes, or until the top is golden and set.
  7. Let it cool for a few minutes before serving, optionally topped with yogurt.

Notes

Try different types of berries and serving it warm or chilled. Leftovers can be kept in the fridge for up to four days.
