Description

A hearty bowl featuring juicy grilled chicken coated in BBQ sauce, paired with sweet, caramelized roasted sweet potatoes.


Ingredients

  • 2 chicken breasts
  • 1/2 cup BBQ sauce
  • 2 large sweet potatoes, peeled and chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, fresh cilantro, avocado


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Chop sweet potatoes into bite-sized cubes, toss with olive oil, salt, and pepper, then spread on a baking sheet.
  3. Roast sweet potatoes in the oven for 25-30 minutes until tender.
  4. While sweet potatoes roast, season chicken breasts with salt and pepper; grill or bake until cooked through (about 20-25 minutes).
  5. In the last few minutes of cooking, brush chicken with BBQ sauce to caramelize.
  6. Slice the chicken and layer it over the roasted sweet potatoes in a bowl. Drizzle with more BBQ sauce and add optional toppings as desired.

Notes

Cut uniform pieces for even cooking and don’t skip the BBQ sauce for flavor. You can meal prep components separately and reheat when needed.
