Description

Deliciously spicy and perfectly saucy Bang Bang Chicken, featuring crispy chicken tossed in a creamy, flavorful sauce.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup cornstarch (or flour)
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 3-4 tbsp sriracha sauce (adjust to taste)
  • 1/4 cup sweet chili sauce
  • 2 green onions, chopped (for garnish)


Instructions

  1. Cut the chicken breasts into bite-sized pieces.
  2. In one bowl, whisk the eggs. In another, mix the cornstarch and panko breadcrumbs in a shallow dish.
  3. Dip each chicken piece in the egg first, then coat in the cornstarch mixture until well covered.
  4. Heat oil in a deep frying pan over medium-high heat and fry the chicken pieces for 3-4 minutes per side until golden brown. Drain on paper towels.
  5. In a bowl, whisk together mayo, sriracha, and sweet chili sauce until combined.
  6. Toss the fried chicken in the Bang Bang sauce and serve immediately, garnished with green onions.

Notes

For extra crunch, double dip chicken pieces in egg and breadcrumbs before frying. Store leftovers in an airtight container in the fridge for up to 3 days.
