- 4 cups bread (Challah, Brioche, or stale bread), cubed
- 2 cups milk (whole, almond, or low-fat)
- 4 eggs
- 1 cup sugar (brown or white)

- 4 tablespoons butter (or coconut oil), melted
Instructions
- Preheat the oven to 350°F (175°C).
- Mash the overripe bananas until smooth.
- In another bowl, whisk together eggs, milk, sugar, vanilla extract, cinnamon, and melted butter until smooth.
- Stir in the mashed bananas and gently fold in the bread cubes until coated.
- Transfer the mixture to a greased baking dish and spread evenly.
- Bake for 45-50 minutes until golden brown and custard is set.
- Cool for a few minutes, cut into squares, and serve warm.
