Description

Ingredients

  • 4 salmon fillets
  • 4 cups fresh spinach
  • 2 tablespoons olive oil
  • 2 cloves minced garlic
  • 2 tablespoons fresh lemon juice
  • Salt to taste
  • Pepper to taste
  • Fresh herbs (dill or parsley) for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse and pat dry the salmon fillets and fresh spinach.
  3. In a skillet, heat olive oil over medium heat, add minced garlic and sauté for a minute until fragrant.
  4. Stir in the spinach and cook until wilts down (about 2-3 minutes), then remove from heat.
  5. On a baking sheet, lay out salmon fillets skin-side down, drizzle with olive oil, and season with salt, pepper, and herbs.
  6. Spread the sautéed spinach over the salmon.
  7. Bake in the oven for 12-15 minutes until salmon flakes easily with a fork.
