Instructions
- Preheat your oven to 400°F (200°C).
- Rinse and pat dry the salmon fillets and fresh spinach.
- In a skillet, heat olive oil over medium heat, add minced garlic and sauté for a minute until fragrant.
- Stir in the spinach and cook until wilts down (about 2-3 minutes), then remove from heat.
- On a baking sheet, lay out salmon fillets skin-side down, drizzle with olive oil, and season with salt, pepper, and herbs.
- Spread the sautéed spinach over the salmon.
- Bake in the oven for 12-15 minutes until salmon flakes easily with a fork.
- Serve with extra lemon on the side.
