- 4 salmon fillets
- 4 cups fresh spinach
- 2 tablespoons olive oil
- 3 cloves minced garlic
- 2 tablespoons fresh lemon juice
- Salt to taste
- Pepper to taste
- Fresh herbs (dill or parsley) to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse and pat dry your salmon fillets and spinach.
- Heat olive oil in a skillet over medium heat, add minced garlic, and sauté until fragrant.
- Toss in the spinach and cook until wilted, around 2-3 minutes.
- On a baking sheet, lay salmon fillets, drizzle with olive oil, season with salt, pepper, and herbs, and splash with lemon juice.
- Layer the sautéed spinach over the salmon.
- Bake for about 12-15 minutes or until the salmon flakes easily with a fork.
- Serve with a squeeze of lemon, if desired.
Notes
Use fresh salmon for best flavor. Adjust garlic to taste and don’t overcook the salmon for a flaky texture.
