Description

A simple and delicious baked salmon dish served on a bed of sautéed spinach, perfect for quick weeknight dinners.


Ingredients

  • 4 salmon fillets
  • 4 cups fresh spinach
  • 2 tablespoons olive oil
  • 3 cloves minced garlic
  • 2 tablespoons fresh lemon juice
  • Salt to taste
  • Pepper to taste
  • Fresh herbs (dill or parsley) to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse and pat dry your salmon fillets and spinach.
  3. Heat olive oil in a skillet over medium heat, add minced garlic, and sauté until fragrant.
  4. Toss in the spinach and cook until wilted, around 2-3 minutes.
  5. On a baking sheet, lay salmon fillets, drizzle with olive oil, season with salt, pepper, and herbs, and splash with lemon juice.
  6. Layer the sautéed spinach over the salmon.
  7. Bake for about 12-15 minutes or until the salmon flakes easily with a fork.
  8. Serve with a squeeze of lemon, if desired.

Notes

Use fresh salmon for best flavor. Adjust garlic to taste and don’t overcook the salmon for a flaky texture.
