Ingredients

- 1 lb Italian sausage (or turkey sausage)
- 8 oz cheese-filled or meat-filled tortellini
- 6 cups low-sodium vegetable or chicken broth
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 cups fresh spinach (or kale)
- 1 medium onion, chopped
- 2 tbsp olive oil
- 1/2 cup grated Parmesan cheese
Instructions
- In a large pot, heat olive oil over medium heat. Add sausage, breaking it up and cooking until browned.
- Mix in chopped onion and minced garlic, sautéing until the onion is translucent.
- Toss in diced carrots and cook for about 5 minutes until they begin to soften.
- Add the broth and bring to a simmer.
- Add tortellini and cook according to package instructions, usually 3-5 minutes.
- Just before serving, stir in spinach until wilted.
- Ladle the soup into bowls and sprinkle with grated Parmesan cheese.
Notes
Soup tastes even better the next day. Can be made in advance and stored in the fridge. Frozen tortellini may take a couple extra minutes to cook.
