Description

A moist and flavorful quick bread packed with fresh apples and topped with a crumbly streusel, perfect for breakfast or an afternoon snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups diced apples
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup streusel topping (flour, sugar, butter mixture)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan or line it with parchment paper.
  3. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
  4. In another bowl, beat together eggs, oil, and vanilla extract until smooth.
  5. Fold in the diced apples and chopped nuts (if using) into the wet mixture.
  6. Pour the wet ingredients into the dry and mix gently until just combined.
  7. In a small bowl, mix flour, sugar, and butter until crumbly for the streusel topping.
  8. Pour the batter into the prepared loaf pan and sprinkle streusel on top.
  9. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  10. Allow it to cool in the pan for a bit before transferring it to a wire rack.

Notes

Allow the bread to cool completely before slicing for cleaner cuts. Experiment with spices for a fun twist.
