Ingredients

  • 1 ½ cups graham crackers, crushed
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 cup sour cream
  • 3 cups apples, peeled and sliced (Granny Smith or Honeycrisp)
  • 1 ½ cups oats
  • 1 tsp cinnamon
  • ½ tsp nutmeg


Instructions

  1. Preheat your oven to 350°F (175°C). Combine crushed graham crackers and melted butter until crumbly, then press mixture into a springform pan. Bake for about 10 minutes until set.
  2. In a mixing bowl, beat the cream cheese and sugar until smooth. Add in the eggs one at a time, mixing well. Stir in sour cream and pour the mixture over the cooled crust.
  3. Toss the sliced apples with cinnamon and nutmeg, then pour this over the cheesecake filling.
  4. In another bowl, combine oats, more crushed graham crackers, and melted butter, then sprinkle this mixture over the apples.
  5. Bake for 50-60 minutes until the center is slightly jiggly.
  6. Allow to cool completely before refrigerating for a few hours. Slice and serve with whipped cream or ice cream.

Notes

Allowing the cheesecake to chill overnight improves the flavor. For a twist, consider adding other fruits like pears or cranberries.
