Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the crust: Combine crushed graham crackers with melted butter and press into the bottom of a springform pan. Bake for 10 minutes.
- Make the cheesecake filling: Beat cream cheese and granulated sugar until smooth. Add sour cream, eggs, and vanilla, mixing until combined.
- Prepare the apples: Toss sliced apples with sugar and cinnamon.
- Layer: Pour half of the cheesecake filling over the crust, add the spiced apple mixture, then top with the remaining cheesecake mix.
- Make the topping: In a bowl, mix oats, brown sugar, and cinnamon with melted butter until crumbly. Sprinkle over the cheesecake.
- Bake until the center is set and the topping is golden brown, about 50-60 minutes.
- Let cool, then refrigerate for several hours or overnight before serving.
- Serve with whipped cream or caramel drizzle if desired.
