Ingredients

- 2 boneless, skinless chicken breasts
- 2 teaspoons turmeric
- 1 tablespoon fresh ginger, grated
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 4 cups low-sodium chicken broth
- 2 tablespoons lemon juice
- Salt and pepper, to taste
Instructions
- Dice the onion, carrots, and celery. Grate the ginger and garlic.
- In a large pot, heat olive oil over medium heat. Add onion, ginger, and garlic, sauté until fragrant, about 3-4 minutes.
- Add the carrots and celery to the pot, stir and cook for another couple of minutes.
- Stir in the turmeric and a pinch of salt and pepper.
- Add chicken breasts and pour in chicken broth, bring to a gentle simmer.
- Simmer chicken for about 20 minutes, or until cooked through. Remove chicken and shred it.
- Return shredded chicken to the pot, squeeze in lemon juice, and mix well. Adjust seasoning if needed.
- Ladle soup into bowls and garnish with fresh herbs, if desired.
Notes
Use fresh spices for best flavor. This soup can be frozen for future meals.
