- 1 cup egg whites (fresh or powdered)
- 1 cup granulated sugar (or coconut sugar)
- 1 cup cake flour (or all-purpose flour)
- 1/2 teaspoon cream of tartar (or lemon juice)
- 1 teaspoon vanilla extract (or almond extract)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a clean, dry bowl, beat the egg whites until foamy, then add the cream of tartar.
- Gradually add the granulated sugar, beating until stiff peaks form (about 5 minutes).
- Gently fold in the sifted cake flour and vanilla extract.
- Spoon the batter into the cupcake liners, filling them about 2/3 full.
- Bake for 15-20 minutes or until golden and springy to touch.
- Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For best volume, use room temperature egg whites. Store in an airtight container at room temperature for up to three days or freeze well-wrapped.
