- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups shredded coconut
- 1 cup chocolate chips
- 1 cup chopped almonds
Instructions
- Preheat your oven to 350°F (175°C).
- Line a 9×13 inch baking pan with parchment paper, leaving some overhang.
- Cream together the softened butter, granulated sugar, and brown sugar until fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, mix together the flour, baking soda, and salt. Gradually add this to the wet mixture until just combined.
- Gently fold in the shredded coconut, chocolate chips, and chopped almonds.
- Pour the batter into your prepared baking pan, smoothing the top with a spatula.
- Bake for 25-30 minutes or until edges are golden and a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for about 10 minutes, then lift out using parchment paper and cool completely before slicing into squares.
Notes
For a dairy-free option, substitute butter with coconut oil. Ensure your butter is at room temperature for the best results.
