Description

Delicious cookie bars that combine the flavors of coconut, chocolate, and toasted almonds, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups shredded coconut
  • 1 cup chocolate chips
  • 1 cup chopped almonds


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9×13 inch baking pan with parchment paper, leaving some overhang.
  3. Cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In another bowl, mix together the flour, baking soda, and salt. Gradually add this to the wet mixture until just combined.
  6. Gently fold in the shredded coconut, chocolate chips, and chopped almonds.
  7. Pour the batter into your prepared baking pan, smoothing the top with a spatula.
  8. Bake for 25-30 minutes or until edges are golden and a toothpick inserted in the center comes out clean.
  9. Allow to cool in the pan for about 10 minutes, then lift out using parchment paper and cool completely before slicing into squares.

Notes

For a dairy-free option, substitute butter with coconut oil. Ensure your butter is at room temperature for the best results.
