Deliciously nutty and gluten-free chocolate chip cookies made with almond flour.

- 2 cups almond flour
- 1 cup chocolate chips
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1 large egg
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and vanilla extract until light and fluffy.
- Beat in the egg until smooth.
- In another bowl, whisk together almond flour, baking soda, and salt.
- Gradually add the dry ingredients into the wet mixture, mixing just until combined.
- Gently fold in the chocolate chips.
- Drop spoonfuls of dough onto a lined baking sheet, leaving space between them.
- Bake for 10-12 minutes until the edges are golden.
- Let cool on the baking sheet for a few minutes, then transfer to a wire rack to continue cooling.
Notes
For firmer cookies, chill the dough for 30 minutes before baking.
