Description

A quick and flavorful twist on classic fried rice made healthy with an air fryer.

Ingredients

Scale
  • 2 cups cooked rice
  • 1 cup mixed vegetables (frozen peas and carrots or fresh)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 green onions, chopped
  • 1 tablespoon sesame oil (optional)
  • 1 cup protein (chicken, shrimp, or tofu)

Instructions

  1. Prep Your Rice: If using fresh rice, cook and let it cool to avoid stickiness.
  2. Mix It Up: Combine rice, veggies, beaten eggs, protein, and soy sauce in a bowl.
  3. Air Fry Time: Preheat air fryer to 370°F (188°C) and add the rice mixture.
  4. Cook Away: Air fry for 12-15 minutes, tossing halfway for even cooking.
  5. Finish It Off: Sprinkle with chopped green onions and drizzle with sesame oil if using.

Notes

Use day-old rice for best results. Avoid overcrowding the air fryer for crispy texture.
